Job Description

Position Summary:


Production Manager will be responsible for managing the entire production process from raw material handling through packaging in a 24/7 operation that produces fresh-baked food products.


Key Activities:


  • Supervise entire Production operation under the direction of the Plant Manager.
  • Direct resources of plant and equipment toward the most efficient production of baked goods.
  • Plan and schedule production work establishing production sequence in order to meet production requirements and shipping needs.
  • Ensure that quality product is consistently provided to Sales on a timely basis.
  • Troubleshoot production problems and takes preventive or corrective action.
  • Recommend changes to improve quality and reduce costs.
  • Coordinate with Quality Control Department to ensure compliance with uniform product standards.
  • Ensure that all work activities of direct and indirect reports are performed with attention to the highest standards of food quality, safe processes, compliance with all appropriate legal requirements and a focus on continuous process improvement
  • Ensure adequate staffing of each Production & Packaging shift.
  • Ensure proper training of personnel working in semi-skilled positions including but not limited to Ingredient Scaling Area, Mixer Operators, Production & Packaging Machine/Line Operators, etc. (For each Production & Packaging shift)
  • Train, oversee, and assess staffing levels to optimize overall production and packaging performance.
  • Implement company standards for formulas, scaling weights, pan sizes, bake times, bag sizes, and all production control processes for bread and roll products.
  • Promote safety through work procedures, and employee safety programs.
  • Ensure full compliance with all Company policies and standards related to safety, quality, and workplace conduct.
  • Implement best practices to achieve company standards on controllable costs.
  • Responsible for participating in all activities set out by the company in support of the Food Safety Modernization Act.
  • Coordinate with Sanitation to ensure plant and equipment meet regulatory requirements for cleanliness and product safety.
  • Ensure compliance of Recall Procedures


Required Qualification:


  • Completion of AIB Science of Baking correspondence course (or equivalent experience).
  • Completion of American Institute of Baking, Baking Science and Technology Residence Baking Course (or equivalent experience).
  • Operational Efficiency - Plans and coordinates use of manpower, ingredients and equipment to ensure efficient production of consistent quality products.
  • Engineering - Understands the unique equipment in a bakery production plant, along with operation of that equipment relative to the baking process.
  • Ability to trouble shoot equipment to ensure optimum product quality and safety is achieved
  • Accounting Policy and Key Accounting Practices - Understands production accounting along with budgets and profit and loss responsibility.
  • Team Dynamics – Empowerment, Collaboration, Motivation, and Enthusiasm - effectively leads, coaches, trains, and motivates people to follow established standards.
  • Human Performance Management – effectively monitor performance of direct reports and provide feedback to improve performance.
  • Must have effective Oral and Written Communication skills.
  • Must be able to successfully coach, train and follow up with people to ensure production goals are met. Must be flexible in approach to supporting the needs of Sales and Marketing.
  • Must be skilled at building partnerships within the organization and coordinating with support departments.
  • Must be familiar with Microsoft Office Suite.
